Correct me if im wrong but all the data representing counterparty assets should still be present in BCH, BSV and the other forks, so it ought to be possible to create an app that lets you view those assets

I encourage you to commission or make such an app. However, will you call it CounterParty? ttbomk there is only one counterparty and you would be erecting a CashParty, or VisionParty. The transactions may be mirrored, up to the time of fork. But what about after? all the transactions that happened since? The only way CounterParty was on another chain is if there is the consensus. Even with a unanimous foundation agreement it just takes that one guy to run CounterPartyClassic.
